If you want both versions available, you can have two sonarrs, one that downloads in h.264 and one that downloads in h.265 (to a different directory). This is a common pattern for having a 1080p and a 4K version of the same stuff. Plex can look at both directory trees and if it finds the show in both, will show them as one show on screen.

If you cannot direct play 4k, then perhaps you should not even be collecting 4k. If you don't have the storage space for a copy of both 4k and 1080/720, then perhaps you should not even be collecting 4k. Some releases specify that’s its 2.0 stereo in the release name and others don’t. I generally include AAC2 and DD2 as excluded (again that’s only if the release specifies will it work) in settings - indexers - advanced on - restrictions.
